Cheesy Beef Quesadilla

Although, I'm not technically prepping my meals this week, I did make a pound of ground beef to make things a little easier for my meals. One of the meals I'm making with it is a Cheesy Beef Quesadilla.


  • 1 lb of ground beef (I used 90/10 because it was on sale)

  • 1/4 tsp of Onion Powder

  • 1/4 tsp of garlic powder

  • dash of salt

  • 50 grams of fat free cottage cheese

  • 2 flour tortillas

  • 28 grams of fat free cheddar


  1. Cook ground beef, season with onion powder, garlic powder, and salt. Drain excess fat, set aside.

  2. In a bowl, mix 100 grams of ground beef, 50 grams of cottage cheese, and 28 grams of fat free cheddar together.

  3. Spray skillet with non-stick cooking spray, place down tortilla, and top with cheesy beef mixture. Top with additional tortilla.

  4. Once cheesy beef mixture is melted, carefully flip over quesadilla. Cook for another 1-3 minutes

  5. Enjoy!


This recipe makes 1 serving.

Calories: 402

Protein: 45 grams

Carbs: 42 grams

Fat: 17 grams

You can definitely lighten this up by using a leaner beef! I also used Carb Balance flour Tortillas, which are lower calorie.
