Cheesy Ground Beef and Rice Enchiladas

In honor of Cinco de Mayo this week I decided to meal prep some Mexican food! This recipe is inspired by Mason Woodruff's Cheesy Ground Chicken and Rice Enchiladas. The store I shopped at didn't have certain ingredients so I tweaked the recipe to fit what I had.

Ingredients:
1 lb. Ground Beef (97/3)
2 Tbsp. Chili Powder
1 Tbsp Garlic Powder
1/2 Tbsp Onion Powder
1 tsp Paprika
1 tsp Salt
1/2 tsp Cumin
1/2 tsp Dried Oregano
1 1/2 cup of Enchilada Sauce
1/4 cup of Lime Juice (about 2 limes)
2 cups of Chicken Broth
8.4 oz bag of Cilantro Lime 90 Second Ready Rice
10 Flour Tortillas
4 oz. of Mild Cheddar Cheese

Directions:
Preheat oven to 350 degrees Fahrenheit.
In a large skillet cook ground beef over medium heat. Once the beef is nearly cooked, add the dry spices to the skillet. Cook for another 1-2 minutes until the beef is fully cooked and no longer pink. Add 1/4 cup of enchilada sauce and 1/4 cup of lime juice.
Then add the 2 cups of chicken broth and Cilantro Lime Rice to the skillet. Continue cooking, stirring occasionally, and breaking the rice up. Cook for 6-8 minutes or until the mixture thickens. Then remove from the heat.

4. Add 1/2 cup of enchilada sauce to the bottom of a 9" x 13" baking dish.
5. Fill each tortilla with a scoop of the ground beef and rice mixture. Roll them up and place the sealed side down in the baking dish.
6. Spoon the remaining mixture over the top of the enchiladas and spread around, filling the sides.
7. Pour the remaining 3/4 cups of enchilada sauce over top of the enchiladas.
8. Sprinkle 4 oz. of cheddar cheese over top of the enchiladas.
9. Bake in the oven for 25-30 minutes.
10. Enjoy!
