German Sausage, Potato, & Sauerkraut Soup

Here's a little throwback to Soup Season (although you can make soup anytime of year)! I may have to make this again soon!
German Sausage, Potato, & Sauerkraut Soup
Ingredients:
4 tablespoons of butter
1 medium onion, chopped
1/4 cup of flour
1 1/2 cup of chicken broth
2 1/2 cup of milk
12 oz. Polska kielbasa, sliced & halved
1 1/2 cup potatoes, chopped
1 cup of sauerkraut (you could use more or less)
1 cup cheddar cheese
1/2 teaspoon of dried basil
Directions:
Melt butter in large saucepan over medium heat.
Add onions and sauté until tender.
Add flour, stirring until onions are completely coated, then let cook for 1 minute. Add chicken broth and milk.
Turn heat to medium high and stir until it thickens.
Reduce heat to medium. Add kielbasa, potatoes, sauerkraut, and basil. Simmer for 5 minutes. Add cheese.
Add cheese and stir to combine. Then remove from heat.
Optional: Serve with a sprinkle of black pepper on top.

Note: You can also lightened this recipe up by using skim milk, low sodium chicken broth, and fat free cheddar cheese.
