Lightened Up Cheesy Hamburger Helper


Here's a delicious meal prep idea for you that will bring you back. Who else grew ip on Hamburger Helper? This recipe is from thepounddropper.com. Another super easy one! Although I do not follow weight watchers she has so many lightened up recipe ideas, please check her out!


Ingredients:

  • 1 lb. 96% lean ground beef

  • 16 oz. whole grain pasta (I used penne because they were out of whole grain macaroni)

  • 51 g of chopped yellow onion

  • 1 Tbsp minced garlic

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 2 tsp Worcestershire sauce

  • 1 tsp mustard powder

  • 2 Tbsp tomato paste

  • 4 cups of low sodium beef broth (I used 50% less sodium)

  • 1 cup reduced fat cheddar cheese

  • 64 g nonfat plain Greek yogurt (I used oikos triple zero)

  • 3 Tbsp Fritos mild cheese dip


Directions:

  1. Set instant pot to sauté and brown beef until no longer pink.

  2. Add onion and garlic and sauté for 1 minute.

  3. Add Worcestershire sauce, tomato paste, mustard powder, salt, pepper, and cook for 2 minutes.

  4. Pour in about 1/2 cup of the beef broth and scrap the bottom of the pot. This will make sure that anything that is stuck doesn't burn.

  5. Pour in the remainder of the beef broth and turn the instant pot to manual. Set for 5 minutes and make sure the lid is on and in the sealed position.

  6. When done, release the pressure. Remove the lid carefully. Stir in Greek yogurt, Cheese dip, and cheddar cheese.

  7. Enjoy!

This recipe made 8 servings of 235 gram servings. Each serving had:

Protein: 26 grams

Carbs: 42.7 grams

Fat: 7.5 grams
