Mexican Casserole

Who doesn't love some Mexican food? Yet another easy recipe from thepounddropper.com !
Ingredients:
1 lb of lean ground beef
1 small onion chopped
2 cups salsa
1 Tbsp minced garlic
15 oz. Can of black beans, rinsed and drained
2 cups of frozen corn
4 oz. Can chopped green chilies
10 oz. Can of red enchilada sauce
1/2 Tbsp of taco seasoning
10 corn tortillas (🤦🏼♀️ I used flour, don’t do it!)
1/2 cup fat free cheddar
Directions:
Preheat oven to 360 degrees. Spray 9x13 baking dish with non-stick spray.
In a skillet, cook beef and onion. Once beef is cooked, drain.
Stir in salsa, black beans, chilies, enchilada sauce, corn, and taco seasoning. Mix well then remove from heat and set aside.
Cook tortillas 1-2 minutes on each side.
Layer 5 of the tortillas on the bottom of the back dish. Pour half of the casserole mix on top.
Add additional 5 tortillas on top. Spread remaining mix on top.
Cover with aluminum foil and bake for 30 minutes. Uncover and sprinkle on cheddar. Cook for 5 more minutes.

Although delicious, It was a bit of a pain to cut into slices because I used the wrong type of tortillas. Next time I will definitely use corn!!
Also, if you enjoy some heat, you can switch up the salsa!
