One Pot Creamy Chicken Florentine

Sundays are for Meal Prep! A few weeks ago I made a delicious recipe from thepounddropper.com! (Seriously if you haven't checked out her recipes, you NEED to!)

This recipe is so easy to make! Who doesn't love that?
Ingredients:
1.5 lbs of chicken tenderloins (chopped into bite size pieces)
163g of yellow onion
3 cloves of minced garlic
8 oz. of whole wheat pasta (I used penne)
1.5 cups of low sodium chicken broth
14.5 oz. can of fire roasted tomatoes (drained)
1 cup of reduced fat mozzarella cheese
68g of baby spinach
1/4 cup of skim milk
1/4 cup Parmesan cheese
Salt/Pepper to taste

Directions:
In a large skillet, cook chicken bites (add salt and pepper to taste) and onion until chicken is no longer pink on medium-high heat.
Add in garlic and cook for an additional minute.
Add in uncooked pasta, tomatoes, and broth. Stir until combined. Cover and cook on medium-low heat for 12-14 minutes, stirring occasionally.

4. Reduce to low heat. Stir in mozzarella, spinach, and Parmesan. Once combined, add skim milk and remove from heat.
5. Enjoy!
It's seriously that simple.

I portioned this recipe into 6 servings. Each serving was 260 grams.
