Salsa Shredded Chicken

Another meal I made last week that was super easy was Salsa Shredded Chicken Tacos! Salsa Shredded Chicken is only 2 ingredients! Chicken breasts and salsa (and a little water). I make the chicken in the instant pot and then I can use it in different meals throughout the week.


  • 4 chicken breasts

  • 1 cup of salsa (your choice)

  • 1/4 cup water


  • 125 grams of salsa shredded chicken

  • 28 grams queso

  • 35 grams of shredded lettuce

  • 2 Mission Carb Balance Flour Tortillas


  1. In an instant pot, pour in salsa, place chicken on top of salsa, and top with water.

  2. Pressure cook (vent in sealed position), for 10-13 minutes.

  3. After it is done, release the vent and let sit for another 10 minutes.

  4. Shred chicken and drain excess liquid.

  5. Add to your favorite recipes and enjoy!

For my tacos:

I heated 2 tortillas, and added roughly 63 grams of shredded chicken per taco. I topped with lettuce and queso. So tasty!
