Salsa Shredded Chicken
Another meal I made last week that was super easy was Salsa Shredded Chicken Tacos! Salsa Shredded Chicken is only 2 ingredients! Chicken breasts and salsa (and a little water). I make the chicken in the instant pot and then I can use it in different meals throughout the week.
4 chicken breasts
1 cup of salsa (your choice)
1/4 cup water
125 grams of salsa shredded chicken
28 grams queso
35 grams of shredded lettuce
2 Mission Carb Balance Flour Tortillas
In an instant pot, pour in salsa, place chicken on top of salsa, and top with water.
Pressure cook (vent in sealed position), for 10-13 minutes.
After it is done, release the vent and let sit for another 10 minutes.
Shred chicken and drain excess liquid.
Add to your favorite recipes and enjoy!
For my tacos:
I heated 2 tortillas, and added roughly 63 grams of shredded chicken per taco. I topped with lettuce and queso. So tasty!
