Taco Mac



This recipe is another easy one! Reminds me of hamburger helper and is so cheesy!.


Taco Mac


Ingredients:

  • 8 oz. of whole wheat pasta

  • 12 oz. can of evaporated milk

  • pinch of garlic powder

  • dash of salt

  • 1 Tbsp of cornstarch

  • 2 Tbsp of taco sauce

  • 1.25 lbs of lean ground beef

  • 1 Tbsp of taco seasoning

  • 5 oz. of fat free cheddar


Directions:

  1. Cook the pasta according to the package directions. Drain and set aside.

  2. Cook ground beef, mix in taco seasoning and a dash of water. Mix until taco seasoning is well combined with the meat.

  3. Pour meat mixture into cooked pasta bowl.

  4. In a saucepan, mix together, evaporated milk (set aside 1/4 cup), garlic powder, and salt. Stir until well combined.

  5. Bring the milk mixture to a boil, then reduce to a simmer.

  6. In a separate bowl, whisk together the cornstarch and remaining ¼ cup evaporated milk. Then pour the cornstarch mixture into the sauce.

  7. Whisk constantly while the sauce simmers and thickens, about 2-3 minutes.

  8. Take the sauce off the heat. Gradually whisk in the taco sauce and cheddar cheese. Stir until melted and smooth.

  9. Pour sauce into the pasta and meat bowl. Mix.

  10. Enjoy!
